BEETS
Remember all those legendary
Russian centenarians ? The traditional Russian borscht
soup, containing beets, may be one reason begin their long and healthy lives.
These colorful root vegetables contain powerful antioxidants that help protect
against heart disease, birth defects, and certain cancers, especially colon
cancer. The pigment that gives beets their rich, purple-red color is also a
powerful cancer fighting agent. Think of bees as red spinach, (Like Popeye¡¯s
super food). You don¡¯t like cooked beets Try
this: Grate fresh, uncooked beets
over your salad. You can even steam and eat the leafy stems.
PUMPKIN
SEEDS
The most nutritious part of the
pumpkin is the seed. These tasty pods are high in magnesium and fiber. Most of
us never consume enough magnesium, and studies show our risk of death drops by
40% with a good intake of this mineral. Substitute pumpkin seeds for sunflower
seeds or peanuts at your next baseball game. Eat the shells and all. You¡¯ll find them
near the nuts in the snack section.
